ACS-ICSCT, one of the ACS International Chemical Science Chapter, is combining forces with one of ACS’ oldest Divisions, the 105-year old Division of Agricultural and Food Chemistry, to present ACS’ first joint international chapter-divisional symposium. The event will feature four sessions: 1. Food Bioactives and Health, 2. Food Safety, 3. Dairy Products, and 4. Flavor Chemistry. Invited keynote lectures by distinguished scientists from academia, industry, and government research laboratories from around the world will introduce the main topic of the sessions.

The scope of the four symposia topics are:

1. FOOD BIOACTIVES AND HEALTH
Food Bioactives and Health session will include biological evaluation of food components against certain health problems such as metabolic syndrome, cancer, neuropathy, and infectious diseases; chemical characterization and quantitative analysis of bioactive compounds, clinical studies, and commercial development of bioactive compounds.

2. FOOD SAFETY
Food Safety session will cover food adulteration/authentication, food allergens, mycotoxins, industrial and environmental contaminants, food processing, and nanotechnology (safety of nanotechnology products and uses of nanotechnology to solve food safety problems).

3. DAIRY PRODUCTS
Dairy Products session will cover chemistry of milk, cheese, yogurt, and other dairy products, and will include aspects of composition and functionality, differences between organic and conventional milk, and nutrition.

4. FLAVOR CHEMISTRY
Flavor Chemistry session will cover recent advances in methods to decode key odorants and tastants of foods as well as the formation of flavor compounds during food processing. In addition, topics beyond flavor chemistry, such as biomolecular interactions of flavor compounds with human odorant receptors and postprandial effects of aroma compounds in human physiology will be outlined.

The organizers would like to invite you to participate and present a talk or poster at this symposium. The conference includes four symposia with emphasis on agricultural and food chemistry. The conference will include plenary lectures, short talks, and posters.
